Warm and cozy beef stew is a favorite on a cold Fall or Winter night. We love the traditional flavors of rosemary, garlic and red wine, but we thought outside the box with this one. A hint of chocolate from our Olivio Chocolate Buttery Spread adds another layer that we want to keep digging into – with a spoon, with a hunk of bread – whatever works!


  1. In a heavy bottomed pot over low heat, render the bacon.  With a slotted spoon, remove the crispy bacon bits and set on a paper towel for later.
  2. Add the beef chuck to the pot and brown all 6 sides in the bacon fat and season with salt and pepper.
  3. Add onion and sauté until translucent. Add garlic and carrots and cook until aromatic, approximately 2 minutes.
  4. Add red wine and bring to a simmer for 3 minutes, allowing the pan to deglaze and alcohol to burn off.  Add the beef stock, parsley, rosemary, and oregano.  Bring to a simmer then reduce heat to low, cover and cook 3 hours until beef is tender and breaks apart with the touch of a fork.
  5. Just before serving add Olivio Chocolate Spread and cracked pepper. Serve with warm crusty bread.
