We call this cake “The Show Stopper”.  Watch your table of friends fall silent as they take a quiet moment to enjoy every last bite of this Flourless Chocolate Cake.  Not only is the chocolate rich, the texture is smooth and this cake is gluten free.  You’re welcome!


  1. Adjust the oven rack to the center position and preheat the oven to 275*. Spray a 9” spring form pan with vegetable spray.
  2. Melt the chocolate in a glass bowl in the microwave in 30 second increments, stirring between additions. Add Olivio Chocolate Spread to the melted chocolate, stirring to combine.
  3. In a large bowl, whisk together eggs, cornstarch and sugar.
  4. Slowly add the melted chocolate to the egg mixture, whisking constantly.
  5. Pour the mixture into the prepared spring form pan and gently tap on the counter to release any air bubbles. Let stand on the counter for 10 minutes before placing in the oven.
  6. Bake for 50-55 minutes.
  7. Allow to cool for 30 minutes on the counter before placing in the refrigerator to chill for at least 6 hours before serving. Serve chilled.
