Have you tried Cookie Butter yet?  A sweet and creamy spread, similar to the texture of peanut butter, is delicious paired with just about anything.  While it is certainly becoming main stream, I like to take 7 minutes and make it at home.  Not only can I control what is (and is not) in this addictive treat, but I can make it with Olivio Buttery Spread and enjoy the benefits of California Olive Oil! Do you have a favorite flavor combination?  I’d love to hear!

Preparation

  1. Puree your favorite cookies in a food processor.  The finer the texture, the more deliciously spreadable!
  2. Melt Olivio Buttery Spread in a pan over low heat.
  3. Slowly add melted Olivio Buttery Spread to cookie powder and run food processor until smooth and the consistency of peanut butter. Add more melted Olivio if you need a smoother texture.
  4. Add confectioners sugar and continue to mix.
  5. Serve immediately or store in an air tight container in the refrigerator for up to 1 week.

Anna's Notes

Cookies that work especially well include Vanilla, Gingersnaps, Graham Crackers, Peanut Butter and even Short Bread.

Cookies crumble even better when they are a couple days old.  This is a great way to use a few left in the box.

Serve as a delicious spread on slices of fruit, rice cakes, or banana bread!
