Carbonara is one of our favorite Italian dishes—classic, comforting, and full of heart. This light, spring-ready version keeps all the rich, indulgent flavor you love, with a healthier twist. The magic begins with two tablespoons of Olivio Buttery Spread—the true star of the show. With its rich, buttery taste and the goodness of olive oil, Olivio sets the stage for a velvety sauce that’s both satisfying and feel-good.

Eggs and cheese add that signature creamy texture, pancetta brings the savory punch, and cracked black pepper finishes it off with just the right amount of bite. But it’s Olivio that brings it all together—giving this dish its warm, silky, flavor-packed soul.

Whether you’re dining al fresco or whipping up something fresh and easy after a sunny day out, this is the kind of pasta that fuels you, inspires you, and tastes like love in a bowl

Preparation

  1. In a large pot, bring water to a boil for the pasta. Cook pasta according to package directions.  While pasta boils, prepare the sauce.
  2. In a large, shallow skillet, render the pancetta on medium low heat.
  3. While the pancetta is rendering, in a small bowl whisk together the Parmigiano, Pecorino and eggs.  This will be the base of your Carbonara Sauce.
  4. When the pancetta has rendered and the edges are slightly crisp, add the minced clove of garlic and cook for 1 minute or until fragrant.  Add Olivio Buttery Spread to pancetta mixture, melt and set aside.
  5. Drain the pasta and immediately add the pasta to the large, shallow skillet with the pancetta mixture.  Toss a few times and quickly add the egg and cheese mixture.  The steam from the pasta will cook the eggs and yield a delicious and creamy sauce.  Toss in the peas just before serving.  Quick!  Get it while it’s hot!
