Keep things easy and the crowd happy with a bowl of fresh pasta salad that everyone can gather around. Ingredients

  • 1 lb bow tie pasta, cooked and drained
  • Olivio Buttery Spray
  • 1/2 cup summer squash, grilled and diced
  • 1/2 cup red pepper, grilled and diced
  • 1/2 cup tomato, diced
  • 1/2 cup pesto sauce
  • 1/4 cup feta cheese, crumbled
  • 2 cups fresh arugula
  • 1 lb turkey sausage links, grilled
  • salt and pepper

Preparation

  1. Generously toss summer squash and red pepper with Olivio Buttery Spray before grilling and dicing.
  2. While the cooked pasta is still warm, mist a few times with Olivio Buttery Spray to add rich buttery flavor and then toss with your favorite pesto sauce.
  3. In a large bowl, combine the pesto pasta, roasted summer squash and red peppers, fresh tomato and arugula.  Season to taste with salt and pepper. Toss gently and garnish with sausage links and crumbled feta. Serve at room temperature.
