A traditional boiled dinner is as practical as it is satisfying.  Invest in a good quality piece of brisket for the best flavor and tenderness.  The brisket is already full of rich and salty flavor, so don’t be shy cooking it simply in water. The winter vegetables are in for a real treat, when they are slow cooked in the flavorful broth from the slow cooked meat. Bonus points if you can find a Guinness to pair with this! Enjoy.

Preparation

  1. Place the brisket in the slow cooker or Dutch oven and completely cover with hot water.
  2. Add the spice packet and bring to a boil.  Decrease the temperature and simmer for 2 hours or until meat is fork tender.
  3. Add the potatoes, carrots and cabbage and simmer for another 20 to 30 minutes.
  4. Serve hot with a little mustard, your favorite bread, and of course…Olivio!
