Buttery Corn Salad

Sweet, juicy and loaded with the flavor of summer, corn is a supermarket treat this time of year! No need to gnaw on the cob, these shaved kernels are delicious and go down easy, tossed in Olivio Buttery Spray and the goodness of California Olive Oil.

Ingredients

  • 5 ears of corn, steamed or grilled
  • Olivio Buttery Spray (or melted Olivio Vegan for Dairy Free)
  • Kosher Salt and Cracked Pepper
  • 1 cup fresh cherry tomatoes, halved or diced
  • 1 Lime, juice and zest
  • 1 tsp fresh basil, minced
  • 1/2 tsp fresh oregano, minced
  • 1/4 tsp sweet paprika

Preparation

  1. In a large bowl, shave the corn off the cob and toss with Olivio Buttery Spray, to taste.
  2. While the corn is still warm, add the fresh basil, oregano and paprika.  Taste and adjust seasoning with salt and pepper.
  3. Add the tomatoes, and toss well.  Add the lime juice and zest just before serving to awaken the seasoning. Happy Summer!
