Summer squash is at its peak this time of year and a great price at the grocery store.  We love a new recipe almost as much as we love to keep things simple in the kitchen! Olivio Buttery Spread makes a heart healthy flavor base for roasting sliced almonds and summer squash.  We love adding fresh basil and green beans in this dish to brighten the flavor and add a little green goodness.  Tell us what you think!


  1. Preheat oven to 375* and melt the Olivio Buttery Spread on a baking sheet for 2 minutes.
  2. Use an oven mit to pull baking sheet from the oven and toss with summer squash, green beans, salt and pepper.  Return to the oven and roast for 15 minutes, tossing once.
  3. Add the sliced almonds and roast an additional 7 minutes or until vegetables are soft and almonds begin to toast.
  4. Out of the oven, add the sliced basil, lemon juice and parmesan cheese.  Serve warm or at room temperature.
