Sriracha has gone main stream!  Traditionally served with Vietnamese or Thai Cuisine, this spicy hot sauce made with peppers and garlic is now a staple in most households.  We make our own for a condiment that is packed with heat and flavor and lower in sodium than what we can find in the store.  Have you tried Olivio Hot Wings yet?  We’re sure you’ll love them as much as we do!

Preparation

  1. Remove stems and coarsely chop chili peppers.  Place in a medium pot.
  2. Add 4 cloves crushed garlic, 1 tsp kosher salt and 1 cup distilled white vinegar to the pot with peppers.   Place in refrigerator and brine over night.
  3. The next day, add sugar and simmer on low heat for 5 minutes.
  4. Cool to room temperature.
  5. Transfer to a blender and puree a full 5 minutes.  Watch as the color, vibrancy and texture become a brilliant orangey-red!
  6. Run sauce thru a strainer and press out as much juice as possible with a rubber spatula.
  7. Chill sriracha and bring Olivio Buttery Spread to room temperature for the best-ever Olivio Hot Wings!

Spare your skin when working with Hot Peppers.  If you don’t have a conventional glove handy, wrap a piece of plastic wrap around your hand to form a protective mitt.

Brining the peppers in vinegar over night helps soften the heat and bring out the flavor dimensions.
