I grew up enjoying this dish with my family and friends.  A large bowl of rice and steaming pot of chicken curry, surrounded by an array of condiments and toppings, make this an exciting dish to gather around.  With just 6 ingredients, this is a simple curry that comes together quickly.  Olivio Coconut Spread gives the chicken a great sear and blends in seamlessly to the rich coconut flavor in the dish. Be creative with your toppings and enjoy!


  1. Bring 2 1/2 cups of water to a boil and add 1 Tbs Olivio Coconut Spread.  Add brown rice and cook for 35-45 minutes or until rice is tender.
  2. In a large pan, melt the remaining 2 Tbs Olivio Coconut Spread and pan sear chicken breast 3-4 minutes on medium high until mostly cooked and golden brown.  Add curry powder and cook an additional minute.  Add coconut milk and ginger and simmer 5 minutes.  Adjust seasoning with salt to taste.
  3. While the chicken simmers,  prepare your toppings in small bowls.
