If you are trying to squeeze and sneak extra veggies into your kids day, you are not alone!  A great way to do this is to tuck them into some of their favorite dishes.  Let’s start with a classic, Mac and Cheese!  One of the things that really makes Mac and Cheese crave worthy is it’s smooth and creamy consistency.  Obviously, a smooth melty cheese accomplishes this, but there is also room for pureed veggies that hold mild flavor and even a little sweetness.   If your kids love white cheddar Mac, try adding pureed cauliflower.  If your kids will only eat yellow cheddar, try pureed butternut squash.  The water content of the squash and cauliflower adds to the creaminess of the sauce and adds vitamins and minerals to this family classic. Preparation

  1. In a medium sauté pan, sauté onions in Olivio Buttery Spread until translucent.
  2. Steam butternut squash (or cauliflower) in chicken broth until fork tender. Place tender vegetables in the blender with onion, reserving broth for later.
  3. Puree vegetables and add milk and cheese to mixture, to make sauce.  Add a little broth to achieve the desired consistency. Season to taste with salt and pepper.
  4. Pour over cooked pasta and stir to incorporate. Serve warm.
