The secret to the perfect lobster roll?  Keep. It. Simple.  Just like the perfect summer day, simple is best when it comes to this New England classic bite.  The deliciousness of Olivio Buttery Spray celebrates the sweet, briny lobster meat and a little tarragon and good mayonnaise whisked with “lobster water” complete the story.  Low in cholesterol and high in “feel good”, this earns a gold star and a TEN in everything delicious!

Preparation

  1. *”Lobster Water” – Whether you have picked your own lobster or purchased picked meat, rinse the meat quickly under cold water and place in a mixing bowl.
  2. When you take the meat out to cut into bite size pieces, keep the sweet “Lobster Water” that has collected in the bottom of your mixing bowl and add the Mayonnaise and Tarragon, whisking until smooth.
  3. Chop lobster tails into 1/2″ bite size chunks and leave the claw and knuckle meat whole. Return the chopped meat to the bowl and toss in the Mayo/Tarragon dressing.  Chill until ready to serve.
  4. Generously lather the outside of the New England hot dog buns with Olivio Buttery Spread and pan sear on a stove top on medium low heat to lightly toast each side of the bun.
  5. Immediately, pile your lobster meat high and deep in the bun and serve your loved ones a true taste of New England with all the goodness of Olivio and California Olive Oil. Enjoy!

 

Anna's Notes

Only chop the tail meat.  I like to leave the knuckles and claws intact as the meat is tender and it gives the roll an extra WOW factor.
