My favorite breakfast is fresh, fast and healthy.  That’s one reason why I love oatmeal.  We love topping this delicious and heart healthy breakfast grain with seasonal ingredients.  My Baked Oatmeal is loaded with even more protein than the traditional stove top version thanks to skim milk and wholesome eggs.  The berries and maple syrup gives this a little sweetness for the kid in us and the nuts add a great crunch. Olivio Buttery Spread adds a delicious buttery richness with the healthiness of California Olive Oil. Make this at the beginning of the week and enjoy on the go hot or cold the rest of the week.  What a wonderful way to start the day!  Note: This dish is toddler approved too:)

Preparation

  1. Preheat the oven to 375* and butter a 9×13″ baker with Olivio Buttery Spread or Olivio Spray.
  2. In a large bowl, combine the old fashioned oats, cinnamon, baking soda, salt, flax seed and brown sugar.
  3. In a small bowl, combine the skim milk, eggs, maple syrup, vanilla extract, and Olivio Buttery Spread.
  4. Add the wet ingredients to the dry ingredients.  Mix well and pour oatmeal mixture into the prepared baker.  Top with fruit and almonds.
  5. Bake for 25 +/- minutes or until center is set and has a little spring to it.  This dish is ready to enjoy!

 

Anna's Notes

A light dusting of powdered sugar gives this dish an appetizing finish.

Top individual bowls with additional fruit and a splash of milk.

This dish is a great make-ahead meal for the week and is even yummy served cold or at room temperature. Enjoy!
