  1. In the bowl of a stand mixer with a paddle attachment combine the flour sugar and butter.  Mix on medium speed for 30 seconds or until mixture turns to a gravel-like texture.
  2. Add egg yolk and mix for an additional 30 seconds until dough unifies.
  3. Remove from mixing bowl and form into a disc on plastic wrap approximately 7″ wide by 3/4″ thick.  Cover and refrigerate 1 hour.
  4. Remove and roll out 1/4″ thin and place in desired baker.  Return to refrigerator for 1 hour to allow gluten to relax and avoid shrinking in oven.
  5. Preheat oven to 375* and blind bake for 25 minutes or until crust is golden brown.  Allow to completely cool on wire rack before filling with your favorite seasonal flavor. Yum!
