Make Your Own Salad Dressing
An easy way to save money at the grocery store and help keep your calories in line is to make your own salad dressing. Take advantage of the beautiful produce this time of year and keep lemons and olive oil on hand to use as the foundation for delicious and healthy dressings for salads and pasta. Here is one of our favorites that goes as well on leafy greens as it does on pasta or salmon. A blender or food processor makes it smooth and creamy but a simple whisk and minced basil will do the job and give you a more rustic texture.
1 cup lightly packed basil leaves, about 15-20 medium leaves; 2 Tbs fresh squeezed lemon juice; 1/4 cup Apple Cider Vinegar; 1/3 cup Extra Virgin Olive Oil; 2 Tbs local Honey; Kosher Salt & Pepper to taste
Combine the basil, lemon juice, apple cider vinegar, extra virgin olive oil, honey and a pinch of salt and pepper in a blender or food processor. Blend on high for 60 seconds or until basil has broken down and the vinaigrette is a vibrant green color. Enjoy!
