Kale Power Popsicles

I believe healthy food should be delicious…and fun! I want my children to be excited and enjoy nutritious food and I love when we both agree on a great treat like smoothies and popsicles.  Max loves smoothies.  Thanks to a powerful blender, like my Vitamix, I load the smoothies with 2 cups kale, 1 banana, 1/2 cp organic grape tomatoes, 3 carrots, 1/4 avocado, 1/2 cup yogurt, 1 cup frozen fruit and a splash of carrot juice or coconut water.  As a smoothie, these are a great addition to meal time. They give “Mom” peace of mind knowing that although he may pick at the food on his plate, he has slurped down healthy dairy, veggies and fruit.  Now, pour these into fun popsicle mold like the ones by Zuko and voila! Something magic happens when this meal freezes and the intrigue skyrockets on a hot day.  I’ve even heard myself say, “If you finish your dinner, you can have a (super healthy, fiber and antioxidant rich) popsicle, Max.”

Be inventive and fearless with what you use to make the smoothie/popsicles.  I have realized that in only takes a little fruit to sweeten up a ton of veggies so don’t be shy in the greens department.
